The Search for Real Honey - Honey & Greens

Many of us assume honey is one of the simplest foods on our shelves. Bees make it, beekeepers harvest it and we enjoy it on toast, in tea or drizzled over breakfast.

The reality is rather more complicated.

When Idris, founder of Honey & Greens, began researching honey while studying for his bachelor’s degree, he discovered that honey is one of the most frequently adulterated foods in the world. That discovery sent him on an unexpected journey, one that would eventually lead to the creation of his own honey business.

"I wanted to understand what authentic honey should really look and taste like," he tells us.

What followed was a series of visits to British beekeepers and apiaries. It was there, standing amongst the hives and tasting honey directly from the source, that a passing curiosity became something much deeper.

Honey & Greens was founded in 2022 with a simple mission: to offer honey that customers can trust, built on provenance, sustainability and independently verified quality.

For Idris, however, the honey is only part of the story.

The bees themselves left a lasting impression.

"The atmosphere around the hives surprised me most," he says. "Hearing the steady hum of the bees, experiencing the calm of the apiary and tasting honey directly from the hive was incredible."

It’s easy to understand the fascination.

A healthy hive can contain tens of thousands of bees, each performing a role within a remarkably organised colony. Watching them at work provides a glimpse into a world that most of us rarely see.

"Beekeepers become guardians as much as producers, monitoring food supplies, checking the health of the colony and ensuring each hive is ready for winter".

“Autumn represents reflection, preparation and change," Idris says. "It is a time to appreciate what the warmer months produced whilst preparing thoughtfully for the season ahead, much like the bees do."

It is a sentiment that feels particularly appropriate at this time of year.

At Pomarium, we're endlessly drawn to the rhythms of the seasons and the people whose work is shaped by them. Beekeeping is perhaps one of the purest examples. The quality of the honey in your kitchen today is determined by the weather, flowers and forage available many months earlier.

That connection to place is why provenance matters so much to Honey & Greens.

Customers deserve to know where their honey comes from and that they are receiving an authentic product," Idris explains.

For those discovering the range for the first time, he recommends beginning with the British Wildflower Honey, whose balanced flavour offers an introduction to the character and variety of genuine British honey.

“As for his own favourite autumn ritual?

Nothing complicated.

A warm cup of chamomile tea, sweetened with British wildflower honey, enjoyed on a quiet evening as the nights draw in.

Simple pleasures are often the best.

“A BEAUTIFULLY BALANCED HONEY THAT CAPTURES THE CHARACTER OF THE BRITISH LANDSCAPE AND OFFERS THE PERFECT INTRODUCTION TO THE WORLD OF AUTHENTIC HONEY.”

The Production Process

From Hive to Jar...

The Hive

It starts in carefully tended hives across British wildflower meadows. The beekeepers place each hive where the bees can forage freely on native flowers.

Tending the Bees

The beekeepers check frames, monitor colony health and let the bees do what they do best, turning nectar into pure, raw honey.

Harvesting

Honey is extracted using traditional methods which have not changed for over a century, removing the wax cappings, revealing the honey beneath. The frames are then placed in a centrifuge and spun for about 10 minutes to preserve the honey’s natural values.

Gently Warming

The honey is gently warmed below 40 degrees Celsius, a standard and common practice among Beekeepers to make it more manageable while preserving its natural qualities.

Lab Testing

Each batch is sent to Minerva Scientific for C4 sugar analysis and purity testing, so every jar is free from added sugars and artificial ingredients.

Labelling

Every jar is labelled with the country of origin for full transparency so you know exactly where your honey is from. Single origin, never blended.
