Makes 4 drinks · Prep 10 minutes · Cook 15 minutes

Ingredients

  • 1 litre cloudy apple juice
  • 100ml water
  • 20g fresh ginger, peeled and thinly sliced
  • 2 cinnamon sticks
  • 4 whole cloves
  • 2 strips of orange peel, with as little white pith as possible
  • 1–2 tbsp lemon juice, to taste
  • Honey, optional, to taste
  • 1 small apple, thinly sliced, to serve

Method

  1. Put the apple juice, water, ginger, cinnamon, cloves and orange peel in a saucepan.
  2. Bring just to a simmer, then turn the heat low. Warm gently for 10–15 minutes without boiling hard.
  3. Stir in 1 tbsp lemon juice. Taste and add more lemon if you prefer a sharper drink, or a little honey if needed.
  4. Strain into a heatproof jug, removing the whole spices.
  5. Divide between four heatproof glasses or mugs and finish with thin apple slices.

Witch's Apple Brew: mulled cider variation

For an adults-only version, use 1 litre of cider in place of the apple juice and flavour it with our Mulling Spices in place of the cinnamon sticks, cloves and orange peel. Follow the quantity recommended on the spice packaging. Add the water and fresh ginger, then warm gently for 10–15 minutes without boiling. Taste as it infuses and strain once the spice is to your liking. Adjust with lemon juice and a little honey if needed, then serve in heatproof mugs with apple slices.

Contains alcohol, even after warming. For adults aged 18 and over. Keep clearly separate from the alcohol-free batch. The Mulling Spices are prepared in an area containing celery, mustard and sesame; check the cider and spice labels for allergens.
